Wacky Chocolate Cake

No egg and no milk

1 3/4 c flour
1 c sugar
3 T cocoa
1 t baking soda
1 t salt
1 t vanilla
1 T vinegar
5 T melted butter
1 c cold water


Grease an 8" round cake pan. Mix dry ingredients well. Add liquid ingredients and mix well. Bake 35 to 40 min at 350oF. Double recipe for 2 layers. The recipe for a single layer may be mixed right in the pan! 8 servings.

I still remember the day, almost 20 years ago, when my son gave me this recipe from Home Economics class and proudly announced he had a cake recipe that Dad could eat! The recipe is mimeographed in purple ink with lots of cake spatters and his artwork on the back. I've used it as an example for modifying other cake recipes (see Dotty's Cranberry Bread).

Substitution suggestions:

  • Use peppermint extract rather than vanilla.
  • Eliminate the cocoa, add a little flour and spices.
  • Add nuts, raisins or chocolate chips.
  • Use the flour, baking soda, water and vinegar ratios to alter other cake recipes to eliminate egg and milk.
